a MOUTH-WATERING Veg Hakka Rice Noodle recipe just for you.
There are times when you CRAVE some noodles but don’t want to take up the hassle of making noodles which may or may not end up overcooked and broken.
Tune in for the Ultimate Rice Noodle Recipe, which won’t become sticky and definitely won’t become mushy when cooking.
1. Oil as required
2. Garlic – 1 tbsp
3. Onions – 1/3 cup
4. Carrots – 1/3 cup
5. Capsicum – 1/3 cup
6. Cabbage – 1/3 cup
7. Sugar, a pinch
8. Green chilli paste – 1/4 tsp
9. A handful of green Spring onions
10. Noodles – 150 grams
11. Salt to taste
12. White pepper powder, a pinch
13. Light soy sauce – 1/2 tsp
14. Vinegar – 1/2 tsp
Method to prepare –
Step1 – First pre-prep by cutting all the veggies. Cut Carrots, Cabbage, Capsicum and Onion in thin vertical slices and cut Spring onions in 1-inch lengths.
Step2 – Now, bring water to a roaring boil & add salt to taste along with 1 tsp of oil. Add noodles in the boiling water & let it cook for 3 to 5mins. Once soft, strain and rinse it with cold water. Put aside by adding a few drops of oil to keep them separated.
Step3 – Set a Wok (or kadhai) on high flame and add 1tbsp oil and let it heat. Further add garlic, onions, carrots, capsicum & cabbage, stir & cook on high flame for 30 seconds.
Step4 – Now add sugar, green chilli paste, spring onion greens & boiled noodles followed by the remaining ingredients.
Step5 – Stir & mix everything well, cook for 1-2 mins.
